Ají de Gallina Recipe
Ingredients to make Ají de Gallina:
1 hen of 2 kilos approx.
1/2 cup oil
1/4 of kilo of onion chopped
1/2 tablespoon of ground garlic
6 green chili peppers, blended
1 can of evaporated milk
4 slices of ground bread
1/4 of kilo of walnuts
10 tablespoons grated Parmesan cheese
Cooked yellow potatoes
Salt
pepper to taste
To decorate:
olives
hard-boiled egg slices
How to make Ají de Gallina:
Cook the chicken in salted water, until it is tender. Cool and crumble.
Fry the garlic, onion and blended chili pepper in the oil. Add the bread soaked in chicken broth or milk and blended. Cook for 10 minutes.
Add the milk, shredded chicken, cheese, ground nuts, salt and pepper.
Place the potatoes cut in two in a bowl and cover with the previous preparation.
Garnish with the olives and the hard-boiled egg slices.
