Chicken aguaymanto salad recipe

Ingredients to make aguaymanto salad with chicken:
1 unit of chicken breast
150 grams of Aguaymanto
1 unit of Green apple
1 branch of Celery
1 bunch of fresh Basil
1 jet of Olive Oil
2 tablespoons of mustard
1 dessert spoon of Honey
How to make aguaymanto salad with chicken:
The first thing to do is chop the chicken into cubes or cubes and marinate it in a mixture of mustard and honey for 1/2 hour. Then, with the same marinade mixture, we roast them (avoiding burning) and reserve.
In a separate bowl we mix the chopped onion with the celery cut in julienne and the diced apples. We season with olive oil. Finally, add the chicken, the basil leaves (chopped and washed) and the chopped aguaymanto.
We prepare a vinaigrette with a finely chopped green pepper, half a chopped onion, finely chopped green olives and half a hard-boiled egg, also chopped. Add the juice of a lemon, a pinch of apple cider vinegar and stir well so that all the aromas are impregnated.
We add 5 tablespoons of mayonnaise, 1 teaspoon of sugar and a few drops of tabasco if we want to add a touch of spice. We mix until all the ingredients are well integrated with the sauce. We dress the aguaymanto and chicken salad with this vinaigrette and serve.
