Tapioca Daddy Recipe

Tapioca dadinhos are a Brazilian recipe, more precisely from São Paulo, but referring to country cuisine. Its origin comes from the reuse of a pasta with tapioca and cheese that hardened. Nowadays, the dice have spread to different parts of the country and there's nothing better than preparing them in the comfort of your home, isn't it?

The tapioca dadinho can be fried, as in the original recipe, or baked, in a healthier version. In this recipe, the dice are baked, but in the AirFryer, the hot air frying pan that works without oil, which guarantees the same flavor as the oven, but with less preparation time. Ingredients for making tapioca daddy in the AirFryer:

 250 grams of granulated tapioca

 250 grams of grated rennet or mozzarella cheese

 500 milliliters of milk

 1 pinch of salt

 1 drizzle of oil (optional)

How to make tapioca daddy on AirFryer:

In a bowl mix the cheese, tapioca and salt. Reserve.

The tapioca used in this recipe is granulated tapioca, a hard grain tapioca used in preparing, for example, iced tapioca cake. In case of doubt, access our article about the types of tapioca.

Put the milk on the fire and turn off as soon as it comes to a boil. It just needs to heat up, it doesn't need to boil.

Transfer the milk to the bowl with the tapioca mixture and mix well, until the milk is fully incorporated.

Place the dough on a small baking sheet (20 x 25 cm or 18 x 24 cm) lined with film. Cover with wrapping paper, let the dough well flat and refrigerate for at least 3 hours.

Transfer the dough to a cutting board and cut into 2 cm strips and then into cubes.

Tip: If you want, you can transfer the dice to a baking sheet, take it to the freezer for 2 hours until it hardens. Then transfer to sachets and store in the freezer for up to 3 months.

Preheat the AirFryer to 200 degrees. Grease the bottom of the basket with a drizzle of oil to prevent the dice from sticking, and put the dice to bake for about 10 minutes.
