Gum Cookie Recipe
Do you already talk about gummy cakes? It receives several names all over Brazil: sequilhos, gum biscuit, gum raivinha, saquarema ... and is prepared with cassava gum (the same dough used to make tapioca), coconut milk, sugar, egg and Margarine.
This sweet gum biscuit is very popular especially in northeastern Brazil, where it is handcrafted to sell on the street, in stores and even on the beaches. This means that the gummy cookie can yield extra cash for those who like to make candy and cookies for sale!

Ingredients for making gummy cakes:
200 grams of yucca gum or hydrated sweet powder
½ glass of coconut milk (100 ml)
4 tablespoons of margarine or butter
4 tablespoons of sugar
2 egg yolks
1 pinch of salt
How to make gummy cakes:
To make gummy cakes, mix coconut milk, margarine or butter, sugar such as egg yolks and salt in a bowl.
Tip: To get the right consistency, margarine or butter should be at room temperature or slightly softened.
Take the cassava gum, which will be the same as the photograph.
What is Cassava Gum? It's the same as hydrated sweet powder. Cassava gum is sold in the market as tapioca, indicating on the packaging that it is fresh cassava gum. It is used to prepare frying pan tapioca, called tapioca beiju. Learn more about tapioca types to avoid confusion.
Place the cassava gum in the bowl and mix with your hands. Add a little more and mix again. Do this until you add the 200 g of gum and get a consistent dough that does not break, similar to pastry dough - if necessary, add a little more cassava gum to give the dough point firm, as in the photo.
Preheat the oven to 200ºC. Separate pieces of dough with your hands and model in the shape of a ball, rolls or donuts. Place on a greased or lined baking sheet or baking tray.
Tip: Grease your hands with a little margarine or oil, this will make it easier to shape the dough.
